Ingredients
- 4-6 cups COLD Leftover Rice
- 6 Eggs
- 1 Cup Sliced Raw Mushrooms
- 2 Cups Diced Meat (Ham, Chicken, Beef or any meat)
- 2 Cups Frozen Mixed Vegetables (any small-cut cooked veg)
- 5 Tbsp. Oil (Grapeseed or any kind of vegetable oil)
- 3 Tbsp. Minced Garlic
- 2 Tbsp. Sesame Oil
- 1 Tsp. Chinese Five Spice Powder
- 5 Tbsp. Soy Sauce
- 1/2 Cup Sliced Green Onion
Instructions
- In a large frying pan, put a little bit of the oil first, then on medium heat, pour all 6 eggs and spread them to cover the bottom – cook as you would an omelette but don’t worry about breaking it – you will be breaking it all up later, so it is OK to stir to make sure the egg is cooked through, but don’t overcook. When cooked, put the egg aside in a large bowl and cover with a plate.
- Add a little more oil to coat the bottom of the frying pan and saute the mushrooms with about a Tbsp. of the minced garlic. When they are a bit brown, put them with the cooked egg and re-cover with the plate.
- In a very large pot, add about 3 Tbsp. oil, wait for it to get hot, and then add your cold rice. Use a spatula to completely coat the rice in hot oil and become heated through.
- Add the sesame oil, and coat the rice with that.
- Add the soy sauce, and stir through the rice to completely coat it.
- Add the vegetables and meat and stir through the rice until they are all heated through also.
- Add the egg and mushrooms and stir through.
- With your spatula, clear a space, a hole in the middle where you can see the bottom of the pan and drop the butter and the rest of the minced garlic.
- Wait for the butter to melt and heat the garlic.
- Stir everything through and sprinkle on the Chinese Five Spice.
- Stir everything through, cover with a lid, and you are ready to serve!
- You can keep this on a warmer – you may even want to transfer this to a rice cooker on “Keep Warm” if you are serving this later with a meal as a side dish, although we eat this as a main course.
Notes
This dish will be one of your favourites! You will never want take-out Chinese Fried Rice again. Better still, it’s even better the next day!
