Austrian Style Parsley Potatoes
Ingredients
- 5 Potatoes - any kind
- 5 Whole, peeled cloves garlic
- 1/2 Bunch Parsley (or Italian Parsley), finely minced
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
- Salt (optional, to taste)
- Pepper (optional, to taste)
Instructions
- Cut potatoes into wedges (leave skin on if you like, or peel them first)
- Boil a pot of water (salted if you like)
- Add garlic and potatoes and boil for about 6-10 minutes until just barely cooked (soft outside but still firm)
- Drain potatoes and garlic with colander
- Heat olive oil and butter in a frying pan until hot, then add drained potatoes garlic, and minced parsley.
- Stir in frying pan until they smell fantastic!
- Add salt and pepper to taste, and serve
