Stovetop Casserole - Chicken Mushroom Broccoli
Ingredients
- 12 Mushrooms - sliced
- 1/2 Onion - chopped finely
- 4 Cloves Garlic - chopped finely
- 3 Chicken Breasts - diced
- 4 Tbsp Butter
- 1/4 Cup Flour
- 1 1/2 Cup Milk
- 1 1/2 Cup Mozzarella Cheese - Shredded
- 1/2 Cup Parmesan Cheese - Shredded
- Rotini or Fusili (about half a package)
- Salt and Pepper to Taste
Instructions
- Saute Onions and mushrooms together in a large pot until onions are really cooked
- Put them aside in a bowl
- Add to the pot first the butter, then the flour, then the milk
- Blend with a whisk to make it a smooth sauce - may need to add more milk
- Add the mozzarella - salt and pepper to-taste
- Add the mushrooms & onions back in
- Add the diced chicken
- Boil the pasta in salted water, then when it is al dente, add it to the pot
- Steam the broccoli separately -DO NOT OVERCOOK
- Add the broccoli to the pot
- Add the parmesan to the pot
- Done like dinner!!!
